Carrot Pumpkin Soup Refined

When it gets darker and colder outside, nothing fits better than a warming soup. We like the nutrient-rich, especially delicious carrot-pumpkin soup with Chuta® nuts best. For 2 portions you need:

    • 1 onion
    • 1/4 pumpkin (butternut or Hokkaido)
    • 4 carrots
    • 1 potato
    • 1 tablespoon of vegetable broth
    • 1 can of coconut milk
    • 1 tablespoon of curry paste
    • some ginger
    • a handful of roasted Chuta® nuts

There you go: First dice the onion and fry until translucent, then add the finely chopped carrots, pumpkin, potato and ginger and also fry briefly. Season with salt and pepper and then add enough water to cover the vegetables. Add 1 tablespoon of vegetable broth and the Thai curry paste. Add the coconut milk and simmer for about 15-20 minutes. Puree the soup, fill into plates and garnish with Chuta® nuts. Bon appetite!
